Plums and Poppyseed Vegan Cake
Dear fans of easy peasy nutritional sweets!
As the autumn has already crossed over the doorstep, I feel like everywhere I look at, I see plum, apple or pear cakes that appears ultra deliciously, healthy and simply irrestibly. How come?!
This fall season is indeed perfect when it comes to figuring out some quick and easy recipe. Aforementioned fruits are a proof of it. Only make sure whether you possess some kind of a mixer or a grater. They will ease your life, no doubt!
My very first recipe of this season includes plums, apples and poppy seed that are typically connected with the beginning of autumn. If I tried a little bit more, it could also have contained pears. So then, be opened to any alterations and the below recipe consider as some kind of a guideline 😉 On the other hand, this combination was splendid, therefore I would not recommend any alterations at al 😃
Base
100g spelt flour
120g oat flour
3 apples
2 bananas
1tsp of soda or 1 baking powder
50ml of oat milk or any plant milk of your choice
2Tbsp of oil (e.g. coconut oil)
3Tbsp of agave
Top layer
100g dried coconut flakes or chips
250g poppyseed
100g xylitol
2Tbsp chia seeds
200ml oat milk

Process
Put all dried ingredients (flours and soda) into the bowl. Add grated apples and masched bananas along with coconut oil. Regarding the rest of liquid ingredients (agave and milk) add them into the bowl according to the consistency of the dough and your preferences, until it gets the required consistency. I would say that above indicated amounts correspond with the general requirements of a healthy cake 😁 Neither too sweet nor too tasteless. Once the dough is ready, you may put it over into the cake form. When baking I love using a baking paper. It significantly eases washing dishes afterwards.
For a creation of the top layer, as stated above, we mix coconut flakes with a finely ground poppy seed. Then we add some milk in which we dissolved the xylitol mixed with chia seeds. Eventually we add plums cut in two halves or four quarters depending on their size. We mix it up and then we put it onto the prepared base and let it bake for app. 45 minutes on 200°C in previously preheated oven.
