Vegan Blackberry & Currant Cake

Yesterday, when I was browsing on the internet I got an incredible taste on some fresh fruit dessert. Taking back to a childhood, we used to bake cherry or currant cake that was as fluffy as a cloud. I always looked forward when my mum told us that it was time to bake the cake. The smell of its baking completely reminds me my childhood. Such an appreciated moment, when mum took the cake off the oven and sprinkled it with a powdered sugar. Mmmm...

Therefore I decided to try my altered version of such currant cake. The result smells like the original one and tastes at least as great as the original one. As a bonus, you can eat twice more pieces without any guilty consciouses because such a cake is rich in fiber, some extra sugar never killed nobody 😜 and the berry fruit is full of vitamins and minerals and low in sugar.

By the way, if you are not a fan of any sweetener, you can simply omit the sugar or insted of it you can use a stevia. Personally I use a honey quite often, although it is not being considered as vegan since I buy it from a local producer. I love to support local production with which origin I am familiar with. Ingredients

〪1,5 cup spelt flour
〪0,5 cup coconut flour
〪0,75 cup cane sugar/coconut sugar
〪0,5 cup coconut oil
〪250-300ml plant milk
〪2 chia eggs
〪1 baking powder
〪pinch of salt
〪Coconut flakes
〪Blackberries & Currants
〪Banana


           Process

In a separate cup prepare chia eggs in the following manner. Mix two tablespoons of chia with water. As it starts to swell, mix it again. Repeat some more times until it has got a consitency similar to an egg.In a separate bowl mix all dry ingredients together (flours, sugar, baking powder and salt). Then add the rest wet ingredients (oil, milk and chia eggs) and mix it together until creating a dough. Then put the dough into a cake form. I always use a baking paper that makes makes washing dishes much easier.

       Baking time

App. 30 minutes on 180°C (previously preheated)
