Amazing Vegan Apple Pie
Since it has almost started to freeze outside, does anybody also cannot wait any longer for a huge cup of tea? A good hot beverage always goes well with a good piece (or two 👼) of a cake. Well, and which smell does remind you these good old autumn days the most? These early fall days, when the school year just started and there used to be an endless amount of time after school. We used to take off some apples from the neighbour´s apple trees located beyond the fence. Just because of the foreign one tasted better than the home-grown one 😆 I love apples. I could eat them all over the day. Apple, a fruit that we take for granted. A fruit that almost everyone has in a garden or granparents´s garden or neighbour´s garden 😉 When I was in London, I could not believe how come that a package of four apples could cost 2 pounds while a package of four muffins cost only 1 pound. Such a paradox.
Well, back on the track. Today we are going to bake an Vegan Apple Pie (therefore the foregoing short story about apples). This recipe does not contain any dairy product neither eggs. Anyways, as I always say, feel free to adjust it according to your personal preferences. Whether you will use dairy and eggs or not it won't influence the taste at all. Neither you will notice any change (approved and confirmed by eggs&dairy lovers 😉
For 👆 Vegan Apple Pie we will need the following ingredients:
Base
2 cups spelt flour
1/2 cup oats
75g xylitol or any kind of sweetener
Baking powder
1 tsp cinnamon
2 Tbsp chia seeds
3 Tbsp coconut oil
Oat milk
Top layer
6 middle sized apples
2 tsp cinnamon
honey or xylitol or cane sugar or any kind of sweetener

Process
At first we need to cut apples and grate them. It is said that a lot of vitamins is located right under the peel therefore we won´t waste our precious time neither deprive ourselves of vitamins by peeling apples. Win win 😊 Afterwards we put grated apples into the pot, then we add the cinnamon and we cook them for about 10 minutes. According to the taste we can add a sweetener and the lemon juice. It must be markedly sweet and sour at the same time. Once apples start to boil, we let them cook for next app. 5 or 10 minutes.
Whilst apples are being cooked, we prepare a base for the pie. We mix all dried ingredients in a bowl, then we add the coconut oil and according to the consistency we add some milk, more or less until it gets a consistency of a dough. The dough should not be too thick neither too smooth but it should be possible to place it into the cake form and spread it evenly all over the form. Once we have finished with the dough, we can pour the applesauce onto it. Eventually we may decorate the cake with plums or with whatever we have in the fridge or just sprinkle it with a cinnamon or the cinnamon sugar.
Baking time
App. 45 minutes on 180-200°C in a preheated oven.
