Vegan Rhubarb & Strawberry Cake
Ingredients
✘ 350-400g spelled flour✘ 50g dried coconut flakes
✘ 1tsp baking soda
✘ 50g honey/agave/maple syrup/xylitol/coconut sugar
✘ 50g coconut oil
✘ 3-5sp plant milk
✘ 350g rhubarb (app. 6-8 stix)
✘ 1cup strawberry marmelade
Preparation & Proceeding
Mix all dry ingredients in a bowl (flour, coconut flakes and soda). Then pour the melted coconut oil into the bowl, add a sweetener of your choice and then blend the mixture together until a dough is created. Pour in some plant milk when the dough is too thick. Once the dough is ready, put it aside and prepare the rhubarb filling. Chop the rhubarb into thin slices of 0,5 cm wide and mix them ina separate bowl either with fresh strawberries and some sweetener or directly with a strawberry marmelade, as I did. Afterwards put 90% of the dough into the previously oiled and sprinkled cake form in a manner that edges reach the 2/3 of the form´s height and then put the rhubarb mixture onto the dough. Lastly, rip the rest dough into small pieces and put them onto the top of the cake as you see in the picture above. Enjoy!Baking time
