Chickpea Coconut Vegan Cake

Dear friends,

hoping you are doing well and keeping you resistant against this flu invasion that has got me again.

As a consequence, since I spent all weekend in bed by watching the Breaking bad, youtube videos, scrolling down the Pinterest and, as the not very last thing, by eating, I got an idea to bake some quote unquote a healthy protein meal. Since I made a lot of researches that days and we had a soaked chickpeas for the sake of we intended to prepare a hummus, the next step was obviously undoubtable. At first, I decided to prepare the chickpea pancakes (the recipe here). I suppose, since I hadn´t got all proper ingredients named in this recipe, hence this attempt failed 😞 Afterall, as my the very first intention had been, I decided to make a cake or something what, according to the pinterest pictures, looks like blondies or a banana bread. Although I had took some inspiration there, finally I made this so-called a chickpeas coconut cake wthat actually combines these two recipes. Those of you guys who know a banana bread, won´t suprise the texture of this cake neither the taste, especially the banana taste. What a surprise!😋

Anyways, comparing to a typical banana bread, this cake is rich in protein due to the main ingredient is, suprisingly at the second time today, 😋 a chickpeas. Honestly, I would have never thought that the chickpeas could be so tasteless, and therefore a great gluten-free protein base for a cake. Of course that the main secret is hence in the further ingredients that bring a flavour and overall transform this substance to a sweet pleasure, by other words, a cake (a brief definition for a cake 😇).

Well, I really love these kind of recipes that are able to satisfy my cravings whilst they are quote unquote healthy, gluten-free as well as flourless, lactose-free, sugar-free, rich in protein and fiber and moreover plant based or vegan. To clarify, when I say sugar-free I mean a clasic white sugar and when I speak about gluten-free, I mean mainly a standard plain white flour. However, in this case this recipe is undoubtedly suitable for gluten-free intolerance diet. By the way, the another good new is that the process is extra easy, thus get rid of any doubts and look at the recipe.



Ingredients:
2 cups cooked chickpes
2 ripped bananas
1/2 cup plant based milk
4 Tbsp coconut oil
5 Tbsp agave (or maple syrup etc.)
4 Tbsp chia seeds
8 Tbsp dried coconut flakes
1/2 cup plantbased milk
1 and 1/2 soda bicarbonate
pinch of sea salt



Instructions:

1. Put all ingredients into the blender.
2. Preheat the oven at 180 degrees of Celsius.
3. Mix ingredients up untill you reach a mild soft texture. If the dough is too tough, pour some more milk. By contrast, if it is too sparse, add some more chickpeas or coconut.
4. Put a dough into a baking sheet. I used two forms for a banana bread, by using a baking paper.
5. Bake for about 40 mins at 180 degrees of Celsius.
