Buckwheat Porridge

Another tremendously popular grain that has started to be recognised recently is a buckhweat. Speaking about "recently" I mean a period of last five years, more or less. Anyways, from the very start a buckwheat was not very easy to buy, neither to order at any restaurant. It was certainly unknown and this kind of option was very rare. Since these times a market has changed, thanks to God. 🙏 Furthemore, this grain excels in a countless amount of positives, e. g. it is rich in complex carbohydrates, high in fiber, wholegrain, glutenfree, and so on.

For you guys who have never tried it, I would briefly describe it as of a kinda nutty texture and flavor, which makes it as an incredibly suitable base for whatsoever kind of porridge.

Personally I am a big fan of the buckwheat and often use it as a base for sweet meals as well as a side disch when it comes to salty meals. My preferences as well as my cravings, since I really love simple meals, are completely satisfied, either I mix buckwheat with further ingredients or I just eat it simply almost on its own.

As I have tried a buckwheat porridge at one of my very favourite place in Bratislava, I couldn´t wait any longer and had to prepare it at home.

Ingredients (2 servings):

🌱 3/4 cup of buckwheat
🌱 1 can of coconut milk
🌱 1 tbls of chia seeds
🌱 2 tbls of coconut sugar
🌱 2 tbls of goji seeds
🌱 2 tbls of cacao nibs
🌱 2 tbls of maple syrup
🌱 6 dates, chopped






The process is pretty easy and surprisingly very fast.

1. Put a buckwheat along with a coconut milk into a pot.
2. Once it has started to boil, cook it from 10 to 15 minutes while stirring.
3. Add a coconut sugar, whilst pay attention to stir it carefully. A sugar has a tendency to get burnt.
4. Take the pot aside once it has got a porridge consistency.
5. Cover by all the rest ingredients, i. e. chia, goji, cacao nibs, chopped dates and pour with a maple syrup.

By the way, I have to admit that this recipe arose completely as a coincidence considering literally what the fridge had included. Therefore you may add or skip anything according to your preferences (for instance dried coconut flakes, fresh fruit etc.).
